Umeboshi : A Gift To Mankind?

The pickled ume plum is truly delicious. I am utterly addicted to some of the salty, sour stuff I got as a paste from Rainbow. I put it in grain of all kinds, in soup in place of salt and I even dress salads with it (olive oil is a good but in no way necessary companion to the ume).

Umeboshi is said to be highly alkalizing. It makes a lot of sense to eat it with foods that would increase one’s acidity — be it white rice, meat or sugar. As I am a little acidic all around, I’ve benefited a great deal from ume plum despite the absence of the aforementioned poisons from my diet.
